Hello lovelies. Happy Monday! Another horribly hot California day. The last thing I want to do is cook ugh. Being broke like I am doesn't leave many options when you need to eat not to mention feed a child, but you really don't want to cook. Then I remembered this easy spaghetti casserole recipe that my mom and I both used to make back in the day. You can whip it up in the morning, refrigeate and throw it in the oven when you get home. I hope you enjoy
What you need:
1 package of uncooked spaghetti
1 jar of marinara sauce
1 can of chicken or package of grilled chicken
1 package of frozen carrots and peas
2 cups of parmesan cheese seperated
2 cups of mozzarella cheese seperated
Cook spaghetti as directed on package. In a large bowl combine spaghetti noodles, chicken, frozen vegetables, 1 cup of parmesan cheese, one cup of mozzarella cheese and sauce. Put in baking pan and sprinkle remaining two cups of cheese on top. Cook at 350 degrees for one hour or until all cheese is melted. Serve with garlic or Italian bread.
Easiest recipe I've ever made and you really can add any vegetable you want or as many as you want. If you try it let me know what you think. And if you know of any easy recipes please send them to me. I'm always looking for easy and cheap ways to make dinner. :)
