When You're Too Lazy To Cook..

Happy Saturday!  I hope everyone is enjoying this last official weekend of Summer.  If you're anything like me you're probably feeling pretty lazy and relaxed today.  The last thing on my mind right now is cooking.  But we have to eat right?  So what to do on a lazy Saturday when you want to eat something good but are too lazy to spend a lot of time cooking and too broke to go out?  Try these easy lazy girl recipes I found and enjoy!

Sizzling Beef Fajitas with Chilli Sauce

Prep Time 15 Minutes
Cook Time 15 Minutes


Ingredients

For the spice blend:
1 tsp mild paprika
1 tsp mild chilli powder
1 tsp dried thyme
1 tsp Very Lazy Red Chillies
1 tbsp olive oil
Sea salt and freshly ground black pepper
For the fajitas:
2 tbsp olive oil
1 onion, peeled and cut into wedges
2 red peppers, halved, deseeded and cut into thin strips
450g sirloin steak, cut into strips
2 tomatoes, cut into wedges
To serve:
8 tortilla wraps
rocket leaves
200g soured cream
1 tsp Very Lazy Red Chillies

Method

1. In a bowl, mix together the spice blend, season well.
2. Heat a wok or a large frying pan.
3. Add the oil and fry the onions and peppers for 5 minutes, or until they are charred.
4. Add half the spice blend and fry for 2 minutes. Remove the vegetables from the pan and set aside.
5. Add the remaining spice blend to the beef, mix well to give a coating and then stir fry for 3 minutes.
6. Add the tomatoes and fry for 1 minute.
7. Return the vegetables to the pan and stir for 1 minute.
8. Heat the wraps for a few seconds in the microwave oven.
9. Fill the wraps with the beef and vegetables, rocket leaves and a spoonful of soured cream.
10. Spoon the remaining soured cream into dishes and top with a little more Very Lazy Chillies.

Coconut Masala Baked Salmon

 

Prep Time 15 Minutes
Cook Time 15 Minutes


Ingredients

190g jar Very Lazy Coconut Masala Curry Concentrate Sauce
Grated rind and juice 1 lime
100ml coconut milk
4 tablespoons freshly chopped coriander
2 tablespoons freshly chopped mint
4 x 150g thick salmon fillets

4 squares baking paper about 30 x 30cm
Lime wedges and pilau rice, to serve

Method

1. Preheat the oven to 200˚C, Gas Mark 6. Place the coconut masala, lime rind and juice, herbs and coconut milk in a shallow dish and mix well.
2. Add the salmon fillets and turn to coat in the sauce. Leave to marinate for 10 minutes.
3. Place a sheet of baking paper on a large baking tray and place a salmon fillet in the middle, spoon over some of the sauce, then fold over the baking paper several times, tucking the ends under the fish to securely close. Repeat with remaining fish and sauce.
4. Place the fish parcels in the oven and cook for about 15 minutes, until the fish is just cooked.
5. Serve immediately with rice and lime wedges.
